The idea of the set is to give the guest familiar products in a new way. Arthur shared: “We wanted to change patterns or just break them! Our main task with Vasily is to expand the horizons of the guests and teach them to look at the products they already know in a different light”.
Thus, the menu includes the traditional Italian limoncello with Asian spirits, prepared according to age-old technology, such as rosolio, and transparent Coca-Cola with anise. As well as sea urchin caviar, foie gras, Japanese omelette, Yamada-nishiki rice Nanbu Bijin sake, shuumai shrimp, wheat flatbread, wagyu spring roll and black caviar.
The chef prepares dishes according to European methods and classic recipes. According to Vasily, “having traveled to a huge number of countries from China to Latin America,” he came to the conclusion that “any culture of the cuisine of the peoples of the world is similar to each other, they are united by taste.” “
Zaitsev did his first Modern Asia set a year ago at the T1 restaurant and continued to tour with him all over Russia. Version 2.0 was created after experimenting with textures and techniques.
The set can be tested on February 22 from 7:00 p.m. and February 23, March 1, 2, 8 and 9 from 6:00 p.m. to 10:00 p.m. The cost will be 8,000 rubles. Alcoholic accompaniment – 5,500 rubles.
