It’s time for watermelons and melons have finally started to become cheaper. Judging by the ruins, the smallest watermelon weighs at least 5 kilos. And doctors recommend not eating more than 600 grams a day. What to do with the leftovers?
Watermelons have their own GOST 7177-2015, although it only stipulates the rules for transporting and the appearance of a whole watermelon. But we asked nutritionist and primary health care practitioner Lyudmila Denisenko how to preserve it:
1. The main thing is not to buy cut watermelons! Sellers do not wash watermelons (that is, harmful bacteria accumulate on the surface). And they hardly wash knives, from where bacteria can penetrate into the pulp. The same applies to watermelons, from which “pyramids” are cut for testing. And slices cut in the store are also not safe. It is better to buy a whole one, wash it well at home, and then cut it.
2. Watermelon contains a lot of sucrose, which means that sweet-loving bacteria will multiply very quickly on its surface. The hotter it is, the faster spoilage will begin. Therefore, it is ideal to immediately store cut watermelon in the refrigerator.
3. To maintain juiciness, place the watermelon cut side down and wrap the top, along with the plate, with plastic wrap to limit access to bacteria from outside.
4. Do not put strong-smelling foods in it, such as onions or garlic: the porous pulp of the watermelon easily absorbs all unpleasant odors.
5. The optimum storage temperature for cut watermelon is 2-6 degrees. Better: no more than two days, maximum four. Much depends on how the watermelon was stored and transported: whether it has invisible cracks. If it has been left in the heat for a long time, it may ferment faster.
6. Many people note that diced meat, separated from the skin and sealed in an airtight container, can be stored in the refrigerator for up to 5 to 6 days. But focus on the smell (no acidity) and texture (not slimy).

No matter how you try to protect the watermelon, bacteria will still penetrate it and begin to multiply, giving it a bitter taste and a fermented smell. Then the watermelon should be thrown away without regret.
