The first thing we should know is that sourdough is made up of wheat flour or another cereal and water that ferment spontaneously and slowly. In this way, a natural yeast is obtained that provides more flavor and juiciness than that used by industrial bakeries.
The preparation of the sourdough is simple, as is its conservation, but it is a process that will take us a few days. In addition, you have to keep it alive by adding more flour and water daily. Through a long fermentation process, the sourdough provides flavor by the continuous action of the bacteria present, which produce organic acids.
In addition, it breaks down carbohydrates better and breaks down gluten, which deteriorates so that the human body can digest it without problem. Thus, it facilitates digestion when we eat bread. They also have more lactic acid, which makes it easier to absorb minerals like potassium, magnesium, and zinc. Bread made with sourdough is less fattening than industrial white bread, contains more vitamins and fiber, and less fat.

The basic recipe to create the sourdough is as simple as adding 50g of flour and 50ml of warm water every day. The ideal is to keep it at 20-22ºC, so that the yeasts and bacteria develop at the right speed.
Once we have the sourdough in the containers for a week, it can begin to be used to make bread, pizzas, desserts or the like. We take a portion and just have to give it the desired shape and bake.
It is important to add more flour and water in equal parts so that the dough remains alive for a long time. If it is not used for a few days, it must be kept in the fridge and fed so that it does not spoil. But we must discard a part as if we were going to use it and add the ingredients again to have our sourdough always available.
