To avoid deficiencies of certain nutrients, during Lent it is necessary to give preference to proteins from plant foods.

Its best source is legumes: these are various types of beans, lentils, soybeans, peas, chickpeas and mung beans. Each of these products can become a main dish, for example, in combination with vegetables, or one of the ingredients for preparing side dishes and salads.

Various cereals are also rich in protein, as well as micro- and macronutrients important for health. The champions in terms of the content of substances necessary for cellular structure are buckwheat and quinoa. Oatmeal and brown rice are also good options.

Nuts and seeds are also allowed during fasting, there is a wide variety of them. Each type of fruit is not only a good source of protein, but also important vitamins, minerals and fatty acids. Among them are potassium, magnesium, phosphorus, calcium, selenium, iron, manganese, nickel, vitamins B1, B2, PP, E.

Mushrooms also contain protein; They are even often called “meat” for vegetarians. Although they do not have record levels of this substance, they do have a rich composition of amino acids. However, it is better not to rely on this product, as it is difficult to digest and can cause unpleasant symptoms.

Some vegetables, such as broccoli, spinach, and Brussels sprouts, are also good sources of plant protein for fasting people. They are also rich in vitamins, minerals and antioxidants.

Most sweets are prohibited during Lent because they contain milk, dairy products or eggs. They can be replaced, for example, with honey or candied fruits.

In addition to protein, eggs are rich in fat. A good source is avocado. By the way, it is fantastic for breakfast in combination with, for example, protein-rich quinoa porridge.

As for plant products, flax seeds are most similar in nutritional composition to eggs. They contain fatty acids of fairly good quality, but still they are not analogous to fats from animal products.

When replacing eggs with vegetable products, it is advisable to give preference to nuts, mushrooms and legumes. As for fats, these are linseed oil, as well as oils containing lecithin: soybean and regular vegetable oil, but not refined, but cold-pressed.
